Bihar Thekua Recipe: Prime Minister Narendra Modi is on Slovakia tour these days. During his visit to Slovakia, PM Modi presented many special gifts related to India’s cultural and traditional heritage to the leaders there. Thekua, the famous traditional dish of Bihar and Jharkhand, was also included in these gifts. PM Modi gifted Thekua to Slovakia’s President Peter Pellegrini and Speaker Richard Rashi, after which this Indian sweet once again became a topic of discussion.
Let us tell you that Thekua is considered the cultural identity of Bihar and Jharkhand. It is celebrated as Prasad especially during the festival of Chhath. This dish, prepared from ingredients like wheat flour, jaggery and fennel, is known for its taste, long shelf life and tradition. In such a situation, let us now tell you how to make Thekua easily.
Ingredients required to make Thekua
- two cups wheat flour
- Three-fourth to one cup jaggery
- two tablespoons ghee
- ½ cup grated coconut
- 4 to 5 cardamoms
- chopped cashews and almonds as desired
- oil or ghee for frying
Make thekua like this
To make Thekua, first break the jaggery into small pieces and heat it in some water and let it dissolve completely. After this, filter the solution, so that no dirt remains. Now add ghee to it and let it cool a little. After this, take wheat flour in a big vessel and add grated coconut, cardamom powder and dry fruits to it. Now knead a stiff dough with the help of prepared jaggery ball. Keep in mind that thekua flour is kept a little harder than normal roti flour. After the dough is ready, make small balls of it. Now you can mold them with your hands or make designs with the help of a mould. If there is no mould, a sieve, grate or any designed vessel can also be used.

Fry on low flame
Now heat oil or ghee in a pan to fry thekua. When the oil gets hot on medium flame, add prepared thekua and fry it on medium flame till it turns golden. One should not use high flame to fry thekua quickly, because it may remain raw from inside. When it becomes golden, take out the thekua and let it cool. After it cools completely, it can be kept in an air tight container. Due to this, it does not spoil for many days and the taste also remains intact.
