Everyone’s mouth waters on hearing the name of Chole Bhature. But when it comes to making Bhature at home, people often complain that Bhature either becomes hard or does not rise. Whereas the Bhatura available in the market or the confectionary shop swell like balloons and are soft from inside. Actually, there is proper preparation of dough and some cooking tricks behind them. If these are ignored, Bhature cannot be prepared properly. In such a situation, if you also want that your Bhature should become puffy and soft like the restaurant, then it is important to keep some special things in mind while kneading the dough and frying.

It is most important to prepare the right flour

Generally flour is used for Bhature, but with only flour many times the Bhature remains flat. It is considered beneficial to have a little swelling in the flour for better texture. Semolina makes the bhature slightly crunchy and helps them remain puffed for a longer period. Mixing boiled potatoes with it helps in maintaining moisture in the dough, due to which the bhaturas become soft from inside and swell well while stirring.

Miracle of lukewarm water and sugar

While kneading Bhatura dough, it is better to use lukewarm water mixed with a little sugar instead of relying only on curd. Sugar speeds up the leavening process, which makes the dough light and elastic. Due to this, the bhaturas open quickly while frying and their color also becomes golden. Keep in mind that the dough should not be very hard, but should be slightly soft and flexible. Apart from this, even after kneading the dough, it is important to keep it covered for some time instead of using it immediately. Usually one to three hours is given for the flour to slightly ferment. This step makes Bhature spongy from inside and open from outside.

Don’t make this mistake while frying

Bhature puffs properly only when the temperature of the oil is right. If the oil is less hot then the Bhature will absorb the oil and will not puff up. At the same time, in very hot oil, they would get cooked quickly. But may remain raw from inside. As soon as Bhatura is added to the oil, it should be pressed lightly with a ladle, this will cause it to swell immediately.
