What is curd?
Today, curd is known as a product which is made by fermenting milk with a special type of bacteria. However, its preparation method, milk used and taste may be different in every country.
Different forms of curd around the world
kefir yogurt
It is a drink similar to curd, but slightly thinner and slightly foamy. Both bacteria and yeast are used in it, due to which small amount of alcohol can also be produced in it. It is commonly eaten in Russia and Central Asia.
Greek yogurt
Greek yogurt is thick and creamy. To make it, water is removed from milk, due to which there is more protein in it. It is also eaten as dip or sweet. Whereas it is commonly eaten in Greece.
Amasi
Amasi is made by fermenting unpasteurized milk. Its texture is slightly grainy and taste is sour, which is considered a part of the traditional dish there. It is commonly eaten in South Africa.
koumiss
Kumis is eaten in Central Asia and China. It is curd prepared from mare’s milk and it may also contain small amount of alcohol. Whereas traditionally it is served to the guests.

Nai Lao curd is also called Imperial Yogurt. In this, milk is fermented with rice wine and dry fruits or raisins are added to it and eaten as a sweet. It is also commonly eaten in China.
Lassi
The most popular drink made from curd in India is Lassi. This lassi is both sweet and salty. It is prepared by mixing curd, water and spices or sugar.

Laban is also a form of curd, which is prepared by filtering. It is mostly eaten in the Middle East. It is used with food or as a drink.

It is considered a product between yogurt and cheese, which is eaten in Iceland. Its texture is thick and it is eaten with fruits or cereals.
Ayran
Iron is a drink made by mixing curd in cold water, to which salt and sometimes mint or lemon are also added. It is mostly consumed in Türkiye.
