Why Does Ice Taste Like Freezer Smell: Most of us think of freezer as a place where food remains safe and time seems to stand still. Actually, chemical changes continuously take place inside the freezer, which affect both the taste and texture.

Experts say that the real problem is not only related to the process of freezing, but also its speed and the things kept with it. Freezers used in homes freeze food slowly, which causes a process like odor-active compound migration. In simple words, the smell inside the freezer starts spreading from one place to another. If fish or other foods are not properly covered, their odors reach the ice.
Why don’t the market pieces look like snowflakes?
This is the reason why home-made ice cubes do not taste as fresh as those made in the market. In the research titled Effect of Freezing Method and Frozen Storage Duration on Odor-Active Compounds and Sensory Perception of Lamb, the scientist said that during slow freezing, some chemical elements, such as stretcher aldehyde, are formed, which spoil the taste. Along with this, the micro structure of the food also starts breaking down, due to which its natural juice gets reduced.
The ice particles formed by slow freezing are large and rough. They absorb the surrounding odors like little sponges. This is the reason why the taste of ice kept for a long time changes and water also does not seem as fresh.

How much damage does it cause?
Its effect is not limited to taste only. According to a study published in the International Journal of Food Research, the cells of food break down during the process of freezing and thawing. Especially in meat, its juice leaks out while melting, which is called purge loss. This makes the meat dry and less tasty. Repeated thawing and then freezing in the freezer also causes harm. This process is caused by the automatic snow removal system, which causes the ice texture to become thicker and the dispersion of odor increases.
How can we stop this?
However, this problem can be prevented by making some easy changes. First of all, always keep ice and food covered so that the smell does not spread from one place to another. While placing new things, leave enough space between them, so that they can freeze quickly. Avoid storing hot food together, as this slows down the freezing process.
