Used to relieve fatigue by cooking
Asha Bhosle not only sang thousands of songs, but was also fond of cooking since childhood. After marriage, the passion for cooking increased further in the in-laws’ house. He also opened restaurants named ‘Asha’ in Dubai and Kuwait, where North Indian and Maharashtrian dishes are served on his own recipes. Chilli pickle: Asha Tai’s daily companion
Asha Bhosle had told in many of her interviews that her favorite food is plain rice, lentils and chilli pickle. This pickle was comfort food for him. Whenever she was tired she used to eat this. This pickle is pungent, sour and spicy. It can be easily made at home in 10-15 days.
Ingredients (for one kg pickle)
- 1 kg green chillies (fat ones, wash and dry them)
- 4-5 tbsp mustard oil
- 2 teaspoon turmeric powder
- 4 teaspoon red chili powder
- 3 teaspoons dry mango powder or lemon juice
- 2 tsp fenugreek seeds, 2 tsp mustard
- 1 teaspoon asafoetida, salt as per taste
- 1 teaspoon garam masala
method of making
First of all, wash the chillies thoroughly and let them dry. Make a slit in each chilli from the middle. Now heat mustard oil in a vessel. Add fenugreek, mustard and asafoetida and let it crackle. Lower the flame. Now add turmeric, red chilli powder, salt, dry mango powder and garam masala and mix. Add chilli and mix well. Cook on low flame for 5-7 minutes. When it cools down, fill it in a glass jar. Keep it in the sun for 2-3 days and then keep it in the fridge and eat it. Its taste doubles with rice and pulses. Asha Tai used to make it for 10 days.
2. Kadhai Gosht: Celebs’ Favorite
Asha Bhosle had told in one of her interviews that her favorite dish Kadhahi Gosht was very famous. Even stars like Rishi Kapoor used to get this dish made from him again and again. This is a spicy and ghee based mutton dish, which you can make at home in restaurant style.
Ingredients (for 4 people)
- 500 grams mutton (boneless or with bone)
- 4 large onions (finely chopped)
- 4 tomatoes (pureeed)
- 2 teaspoons ginger-garlic paste
- 1 tsp turmeric, 2 tsp coriander powder
- 1 tsp garam masala, 2 tsp red chili powder
- 4-5 green chillies, chopped
- 4 spoons ghee or oil, salt as per taste
- Coriander leaves to garnish
method of making
Put mutton, turmeric, salt and some water in a pressure cooker and cook for 4-5 whistles. Heat ghee in a separate vessel. Fry until onion turns golden. Add ginger-garlic paste. Add tomato puree, red chilli, coriander powder and fry well, until oil starts leaving. Now add cooked mutton. Mix green chillies and garam masala. Cook on low flame for 10 minutes. Turn off the gas once the gravy becomes thick. Garnish with coriander. Eat with roti or naan. Asha Tai used to make it with special spices.
Chicken Biryani: Asha Tai’s Special
Asha Bhosle used to make many types of biryani like chicken, fish and saffron biryani. His biryani is also famous in the restaurants of Dubai. Try it once at home, you will make it again and again.
Ingredients (for 6 people)
- 1 kg chicken
- 500 grams Basmati rice (soaked)
- 4 onions (2 finely chopped, 2 sliced and fried)
- 3 tomatoes, 2 tsp ginger-garlic paste
- 1 cup curd, 1 teaspoon turmeric, 2 teaspoon red chili
- 2 tsp garam masala, 4-5 cloves, 2 cinnamon sticks
- 4 spoons ghee
- saffron soaked in milk
- mint-coriander
method of making
Marinate the chicken in curd, spices, ginger-garlic and tomatoes for 2 hours. Cook the rice 70% and filter it. Heat ghee in a vessel. Fry onions. Add marinated chicken and cook for 15 minutes. Now apply the layer. Chicken below, rice on top, then mint, saffron milk and ghee. Cook on dumper for 20-25 minutes. Garnish with onion barista. Asha Tai used to say that biryani should be prepared with love.
Shami Kebab: Rishi Kapoor’s darling
Asha Tai’s Shami Kebabs were so soft that Rishi Kapoor used to eat them again and again. These kebabs are made of chicken or mutton. These can be served with tea or in the main meal.
Ingredients (for 10-12 kebabs)
- 500 grams chicken mince (or mutton)
- 1/2 cup gram dal (soaked)
- 1 onion, 2 green chillies
- 1 tsp ginger-garlic paste, salt
- 1 tsp garam masala, 1 egg (for binding)
- oil for frying
method of making
Put mince, lentils, onion, chilli, spices and some water in the cooker and whistle for 3-4 whistles. Cool once the water dries. Grind it in a mixer and add egg. Make small tikkis. Pour oil on the pan and fry until golden on both sides. Eat with chutney or curd. Asha Tai used to make it by hand.
Green brinjal bharta: used to remind me of my mother.
This recipe of Asha Bhosle’s mother was her favourite. This dish is made by roasting brinjal on fire. It is healthy and tasty.
Ingredients (for 4 people)
4-5 green brinjals (small)
3 onions (finely chopped)
3 tomatoes (chopped)
2 green chillies, 1 teaspoon ginger-garlic
1 teaspoon turmeric, 1 teaspoon red chili
2 teaspoons oil, coriander leaves
method of making
Fry the brinjal from all sides on fire or gas. Remove the peel and mash the pulp. heat the oil. Fry onions. Add ginger-garlic, chilli, spices. Add tomatoes and fry. Add brinjal pulp and cook for 10 minutes. Garnish with coriander. It tastes amazing with roti. Asha Tai used to miss this dish of her mother very much.
