For this recipe, you will need 1 liter full cream milk, half cup sugar, 2 to 3 bread slices and cardamom powder to enhance the taste. If you want, you can also use chopped almonds and pistachios to decorate the top.

Put full cream milk in a heavy bottomed vessel and boil it on medium flame. When the milk boils well, reduce the flame and let it cook for about 5 to 7 minutes, so that the milk becomes a little thick.

Remove the edges of the bread and grind its pieces finely in a mixer. Now slowly add this ground bread into the boiling milk and keep stirring continuously, so that lumps do not form in the mixture. After this, add sugar and cardamom powder and cook for 2 to 3 minutes more. When the mixture becomes thick like rabri, turn off the gas.

Let the prepared mixture cool completely at room temperature. After it cools down, add chopped almonds and pistachios to it, which will further enhance the taste of kulfi.

Now fill this prepared mixture in small earthen pots or kulfi molds. Cover it well by applying foil paper or plastic wrap on top, so that the layer of ice does not accumulate in the kulfi.

Keep the pots in the deep freezer for 7 to 8 hours or overnight. After the kulfi sets well, take it out. Serve chilled Matka Kulfi by adding chopped pistachios on top and enjoy this delicious homemade dessert.
