How to make jackfruit biryani at home?
Always use raw jackfruit to make jackfruit biryani. First of all, peel the jackfruit thoroughly and cut it into small pieces. Keep in mind that before cutting jackfruit, apply mustard oil on your hands, knife and cutting board. This will prevent the sticky juice of jackfruit from sticking to hands and utensils. After this, boil the jackfruit lightly or add salt and fry it a little. This removes its rawness and the taste also improves.
Prepare rice like this
Wash Basmati rice thoroughly and soak it in water for about 30 minutes. After this, boil water in a vessel and add salt, bay leaf, cinnamon and cardamom in it. Now cook the rice till about 70 percent and then drain the water and keep it aside. Keep in mind that the rice is not cooked completely, because later it has to be cooked on low flame also.
Prepare masala like this
Now heat oil or ghee in a pan. Add cumin, bay leaves, cloves and cardamom and temper it. After this, add finely chopped onion and fry until it turns golden. Now add ginger-garlic paste and cook well, then add tomatoes and prepare the masala. When the spices are cooked well, add turmeric, red chili powder, coriander powder and biryani masala. Now add the previously prepared jackfruit and mix the spices well. If you want, you can also add some curd to it. After this, cook it on low flame for a few minutes, so that the taste of spices gets mixed well in the jackfruit.

Now cook biryani like this
To cook biryani, take a heavy bottomed vessel. First spread a layer of jackfruit masala in it. Apply a layer of half-cooked rice on top of it. Now add some saffron milk, ghee, fried onion and almonds and cashews on top.
Similarly prepare two to three layers. After this, cover the vessel well. If you want, you can also seal the lid with flour so that steam does not come out. Now cook it on low flame for about 10 to 20 minutes. Due to this, the taste of rice and spices mix well and the flavor of biryani increases manifold. When the biryani is completely ready, take it out hot and serve it with raita or chutney of your choice.
